Summary : To recall the general mechanism of fatty acid oxidation, a focus is made on the different degradation product families and their impact on the quality of blend or formulated fats and oils. Because of the importance of the analytical method choice to assess the oxidative status of the products, a review underlines the precautions required to interpret the results. Another important point concerns the Good Manufacturing Practices to reduce the oxidative risk, and the respective advantages and drawbacks of a selection of synthetic or natural antioxidants in cosmetic applications, conclude this short review.
