Summary : The objectives of the previus project is to implement an expertise in food microbiology, in order to create an interactive tool, intended to be used by the food industry and its partners, to answer concrete questions on the evolution of micro-organisms in foodstuffs. The Previus tools will be composed of a databes (on foodstuffs, processes, pathogens and spoilage micro-organisms), mathematical predictive models (for growth, survival and decrease of micro-organisms), and a user friendly software implementing an access via Internet. The builders of the system are gathered in a Scientific group including laboratories, food companies and governmental organizations (Ministry of Agriculture, and of Research). It is expected that Previus will be launched in 2002, as a bilingual system (French-English), and will be operational and available to the food industry from the beginning of 2003. |
