Physical and chemical foundations for the breakdown of fats

Summary : The physical-chemistry basis shared by the numerous techniques of lipid fractionation : distillation, extraction, fractionated crystallisation, chromatographies are examined. The analysis of schematic phase diagrams allows to describe in simple words the constraints and limitations of these processes in terms of yield value and fractionation capability. These limitations are divided into that arising from physical constraints of the fractionation that are only overcome by changing separation conditions and that originating from the process getting improvement by its optimisation.
