The contribution of the informal sector to the supply of dairy products to Mediterranean cities : The case of Tunisia, Morocco, Lebanon, and Turkey

Summary : Often declared as illegal by governments, the informal sector is both very present and very dynamic in the dairy sector of Mediterranean countries. Depending on the city, the informal sector attracts 30‐85 % of the marketed output, and 25‐75 % of the turnover in the dairy sector. Surveys carried out in Tunis, Casablanca, Kenitra, Bursa, and Beirut focus on the interrelations between the actors of the formal sector and those of the informal sector. Our work shows that these actors are complementary rather than competitors. Thanks to attractive prices, and to a fair geographical coverage of collection and trade activities, the informal sector efficiently contributes to supplying the cities. However, sanitary aspects should be improved.
